It’s been requested that I post some recipes of simple, healthy, and delicious vegan food.
This one is in response to a young woman who shared her love for Morningstar vegan burger patties.
Garbanzo and Tabouli burger patties!
I take 2 cans of organic garbanzo beans and 1 can of organic kidney or black beans, and toss them in the food processor with 1/2 cup of organic tabouli mix, available in a box or in bulk. I add 2 small cloves of diced garlic, 2 tbsp of olive oil, 2 pinches of fresh chopped rosemary from the garden, and a 1/4 cup of loosely chopped cilantro.
Blend until it starts to clump up into balls. If clumping doesn’t happen due to the liquid in your beans or whatever, not to worry. Just wash your hands and make balls in your palms.
If you don’t have a cast iron skill or iron grill, you should go to Goodwill and get one ASAP. Cast Iron is awesome for cooking, and it’s said that it adds iron to your diet.
At any rate, oil the cooking surface with olive oil and place your balls on them on medium heat. Squash them into round patty shape with a spatula. I recommend a metal spatula with cast iron, it’s easier to scrape the pan with and helps avoid sticking.
Let them cook on that side until most of the oil in the skillet is absorbed, then check the bottom. It should be browned nicely before you flip it. I scoop the patty out of the skillet and add a dash more oil before placing the uncooked side down. Let it fry until the oil is mostly absorbed, and it should be done. If a toothpick inserted in the center comes out dry and hot, you’re golden.
Pretty simple, fast, and you can add seasoning and spices to taste, or baste while frying with Annie’s organic BBQ or some homemade BBQ sauce, or Secret Aardvark Drunken Garlic Black Bean Sauce!
